In a heavy bottomed pan with a lid:
cook 1 onion in a little oil until softened.
Add 2 chopped garlic cloves and cook for 2 mins.
Add 1 sliced pepper and 1 courgette diced and cook for about 10 mins until peppers have softened.
1 x 400g tin chopped tomatoes
1 x 400g tin haricot beans
2 tbsp tomato purée
1 tbsp oregano
1 tbsp rosemary
1 tbsp thyme
1 bay leaf
200 ml cold water
Half teaspoon salt
Half teaspoon black pepper
Stir together and cover and simmer on a low heat for about 35 mins stirring occasionally.
Remove bay leaf and serve with brown or white rice
